The gyuto is probably the ‘hottest’ Shigefusa knife at the moment. Hereby two knives side-by-side, a kitaeji wa & yo handled gyuto, 240mm in length. Enjoy.
First shot, the two kitaeji gyutos side by side. Quickly noticable is the difference in handle length. The wa handle is 157mm long, while the Yo handle only measures 120mm; diameter is different as well: 29.6mm vs 25.1mm for the Yo handle.
Again, clear is the difference in handle length and this time around the blade profile and height at the heel
Coil shot: the yo handle "looks" to have a slimmer profile, though the measurements tell otherwise. So either one of two things: my caliper is off, or not. We are looking at the coil, while the measurements are taken at the middle of the knives, obstructed by the coil from this angle.
